Vietnamese Summer Rolls

Ingredients (2 Persons)
- 8 rice paper wrappers
- 2 cups cooked vermicelli noodles
- 1 cucumber, cut into strips
- 2 carrots, cut into strips
- 1/2 cup chopped fresh herbs (cilantro, mint, basil, etc.)
- 1/2 cup cooked, shelled shrimp (optional)
Directions

Step 1
Fill a large bowl with warm water. Dip each rice paper wrapper into the water for 15-20 seconds, or until soft and pliable.

Lay the wrapper on a flat surface and place a small handful of noodles, cucumber, carrots, herbs, and shrimp (if using) in the center of the wrapper.

Fold in the sides of the wrapper, then roll up the wrapper, starting at the bottom and rolling towards the top.

Repeat with the remaining wrappers and filling ingredients. Serve with peanut sauce for dipping.
