Stir-Fried Eggplant with Spicy Garlic Sauce

  • 2 large eggplants, cut into 1-inch cubes

  • 1/4 cup soy sauce
  • 1 tablespoon rice wine vinegar

  • 2 tablespoons green onion, thinly sliced

Directions

  • Step 1
    Heat the oil in a large skillet over medium-high heat. Add the eggplant and cook for 8-10 minutes, stirring occasionally, until the eggplant is lightly browned and tender.
  • Step 2
    Add the garlic, ginger, and red pepper flakes and cook for 1 minute, until fragrant. Add the soy sauce, rice wine vinegar, and sesame oil and stir to combine.
  • Step 3
    Reduce the heat to low and simmer for 3-4 minutes, until the sauce has thickened. Stir in the green onion and serve hot.
