Vegetarian Sushi Hand Roll

Ingredients (2 Persons)

  • 2 cups cooked short-grain brown rice, cooled to room temperature
  • 2 tablespoons white rice vinegar
  • 4 sheets of nori (dried seaweed)
  • 1/2 avocado, sliced
  • 1/2 cucumber, sliced
  • 1/4 cup pickled ginger, sliced
  • 2 tablespoons sesame seeds

Directions

  • Step 1
    Mix the rice vinegar into the cooled rice until the rice is evenly coated.
  • Step 2
    Place a sheet of nori on a bamboo rolling mat. Spread 1/4 of the rice on the nori, leaving a 1-inch border around the edges.
  • Step 3
    Arrange 1/4 of the avocado, cucumber, and pickled ginger in a row near the bottom of the nori sheet.
  • Step 4
    Using the bamboo mat, roll the nori sheet up, pressing firmly to form a firm roll. Sprinkle the roll with sesame seeds.
  • Step 5
    Repeat with the remaining ingredients to make 3 more sushi hand rolls.
