Vegan Coconut Curry with Tofu

Ingredients (2 Persons)

  • 1 package (14-16 ounces) extra firm or super firm tofu
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons grated fresh ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 can (13.5 ounces) unsweetened coconut milk
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup vegetable broth
  • 1 cup frozen peas
  • 1/2 cup chopped fresh cilantro

Directions

  • Step 1
    Drain the tofu and cut it into 1-inch cubes. Heat the olive oil in a large skillet over medium heat. Add the tofu cubes and cook until they are golden brown on all sides, about 10 minutes.

    Add the onion, garlic, and ginger to the skillet and cook until the onion is softened, about 5 minutes.
  • Step 3
    Stir in the cumin, coriander, turmeric, garam masala, and cayenne pepper (if using). Cook for 1-2 minutes, until the spices are fragrant.
  • Step 4
    Add the coconut milk, diced tomatoes, vegetable broth, and frozen peas to the skillet. Bring the mixture to a simmer and cook for 10-15 minutes, until the sauce has thickened and the flavors have melded together.
  • Step 5
    Stir in the cilantro and serve with cooked rice or quinoa.
