Spinach and Potato Curry

  • 2 tablespoons cooking oil
  • 4 cloves garlic, minced
  • 1 onion, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon yellow curry powder
  • 3-4 potatoes, diced
  • 1 (14-ounce) can coconut milk
  • 2 cups vegetable broth
  • 1 (14.5-ounce) can diced tomatoes
  • 2 tablespoons freshly squeezed lemon juice
  • 2 cups fresh spinach

Directions

  • Step 1
    Heat the oil in a large pot over medium heat. Add the garlic and onion and cook until the onion is translucent, about 5 minutes.
  • Step 2
    Stir in the cumin, coriander, and curry powder and cook for 1-2 minutes, until the spices are fragrant.
  • Step 3
    Add the potatoes, coconut milk, vegetable broth, and diced tomatoes. Bring the mixture to a boil, reduce heat to low, cover, and simmer for 15 minutes, until the potatoes are tender.
  • Step 4
    Stir in the lemon juice and spinach and cook for an additional 5 minutes, until the spinach is wilted.
