Ingredients (2 Persons)

  • 2 cups cooked sushi rice
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 2 avocado, sliced
  • 1 red bell pepper, julienned
  • 1 yellow bell pepper, julienned
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • 2 green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup sesame seeds
  • Tamari or soy sauce, for serving

Directions

  • Step 1
    In a large bowl, stir together the sushi rice, rice vinegar, honey, and salt. Let cool to room temperature.
  • Step 2
    Divide the sushi rice among four bowls. Top each bowl with avocado, bell peppers, cucumber, carrot, green onion, and cilantro.
