Chickpea and Spinach Curry

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 3 cups cooked chickpeas
  • 2 cups vegetable broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1/2 cup coconut milk
  • 3 cups baby spinach

Directions

  • Step 1
    Heat the olive oil in a large pot over medium-high heat. Add the onion and garlic and cook until softened, about 5 minutes.
  • Step 2
    Stir in the ginger, cumin, coriander, turmeric, cinnamon, and cayenne pepper and cook for 1-2 minutes, until fragrant.
  • Step 3
    Add the chickpeas and vegetable broth to the pot and bring to a boil. Reduce the heat to medium-low and simmer for 15 minutes.
  • Step 4
    Stir in the diced tomatoes and coconut milk and simmer for an additional 10 minutes.
  • Step 5
    Add the spinach to the pot and cook until wilted, about 5 minutes. Serve warm.
