Gobi Masala Curry

Ingredients (2 Persons)

  • 1 tablespoon oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 teaspoons garam masala
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon chili powder (optional)
  • 1 large cauliflower, cut into florets
  • 1 can (14.5 ounces) diced tomatoes
  • 1/4 cup water
  • 1/4 cup cilantro, chopped

Directions

  • Step 1
    Heat the oil in a large skillet over medium-high heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Add the garlic and ginger and cook for another minute.
  • Step 3
    Stir in the garam masala, cumin, coriander powder, turmeric, and chili powder (if using). Cook for 1 minute, stirring constantly.
  • Step 4
    Add the cauliflower and cook for 5 minutes, stirring occasionally.
  • Step 5
    Add the diced tomatoes and water and bring to a simmer. Reduce the heat to low, cover, and cook for 10-15 minutes, stirring occasionally, until the cauliflower is tender.
  • Step 6
    Remove the lid, increase the heat to medium-high, and cook for 5 minutes, stirring occasionally, until the sauce has thickened.
  • Step 7
    Stir in the cilantro and serve.
