Taiwanese Pineapple Cake

Taiwanese pineapple cake, also known as pineapple shortbread, is a popular traditional dessert in Taiwan. It is made of a sweet, buttery crust filled with pineapple jam. Ingredients (2 Persons)

  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, melted
  • 3/4 cup pineapple juice
  • 1/2 cup pineapple, diced
  • 1/2 cup walnuts, chopped

Directions

  • Step 1
    Preheat oven to 350 degrees F (175 degrees C).
  • Step 2
    In a large bowl, sift together the flour, sugar, baking powder, baking soda and salt.
  • Step 3
    In a separate bowl, mix together the butter, pineapple juice and diced pineapple.
  • Step 4
    Stir the wet ingredients into the dry ingredients until just blended.
  • Step 5
    Pour the batter into a lightly greased 9x13 inch baking pan.
  • Step 6
    Sprinkle the chopped walnuts over the top.
  • Step 7
    Bake for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
