Vegan Chickpea Curry

Ingredients (2 Persons)

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (15 ounce) can chickpeas, drained and rinsed
  • 1 (14 ounce) can coconut milk
  • 1/2 cup vegetable broth
  • 1/4 cup chopped fresh cilantro, plus more for garnish

Directions

  • Step 1
    Heat the olive oil in a large saucepan over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Add the garlic and ginger and cook for 1 minute.
  • Step 3
    Stir in the curry powder, cumin, coriander, turmeric, and cayenne pepper. Cook for 1 minute, stirring constantly.
  • Step 4
    Add the diced tomatoes, chickpeas, coconut milk, and vegetable broth. Bring to a simmer and cook for 10-15 minutes, until the sauce has thickened and the flavors have melded together.
  • Step 5
    Stir in the cilantro and season with salt and pepper to taste. Serve with cooked rice and garnish with more cilantro, if desired.
