Thai Green Curry

Thai Green Curry is a classic type of Thai cuisine. It is made with a blend of green chilies, garlic, galangal, lemongrass, and other spices such as cumin, coriander, and turmeric. This dish is usually served with jasmine rice and is often topped with fresh herbs like Thai basil and cilantro. Ingredients (2 Persons)

  • 2 tablespoons vegetable oil
  • 3 tablespoons Thai green curry paste
  • 1 (14-ounce) can coconut milk
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1/4 cup vegetable broth
  • 1/2 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 4 ounces mushrooms, sliced
  • 1 cup chopped baby spinach
  • 1 cup cooked jasmine rice

Directions

  • Step 1
    Heat the oil in a large skillet over medium-high heat. Add the curry paste and cook for 1-2 minutes, until fragrant.
  • Step 2
    Stir in the coconut milk, fish sauce, brown sugar, and vegetable broth. Bring the mixture to a simmer and cook for 3-4 minutes, until the sauce has thickened.
  • Step 3
    Add the bell peppers, onion, garlic, ginger, turmeric, coriander, cumin, and cayenne pepper. Cook for 5 minutes, stirring occasionally.
  • Step 4
    Add the mushrooms and spinach and cook for an additional 3-4 minutes, until the vegetables are tender.
  • Step 5
    Serve the curry over cooked jasmine rice.
