Vegan Sweet Potato and Pea Curry

Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 1 large sweet potato, peeled and diced
  • 1 (14.5 ounce) can coconut milk
  • 1 cup vegetable broth
  • 1 cup frozen peas
  • Salt and pepper to taste

Directions

  • Step 1
    Heat the oil in a large skillet over medium-high heat. Add the onion and sauté until softened, about 5 minutes.
  • Step 2
    Add the garlic, ginger, curry powder, cumin, coriander, and cayenne pepper and cook for an additional minute.
  • Step 3
    Stir in the sweet potato and pour in the coconut milk and vegetable broth. Bring to a simmer and cook, stirring occasionally, until the sweet potato is tender, about 10 minutes.
  • Step 4
    Stir in the frozen peas and season with salt and pepper to taste. Simmer for an additional 5 minutes, until the peas are tender.
