Potato and Pea Curry

Ingredients (2 Persons)
- 2 tablespoons vegetable oil
- 2 onions, diced
- 3 cloves garlic, minced
- 1 2-inch piece of ginger, peeled and grated
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground turmeric
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper (optional)
- 1 teaspoon salt
- 2 large potatoes, peeled and diced
- 1 can (15 ounces) diced tomatoes
- 1 can (15 ounces) coconut milk
- 1 cup frozen peas

Step 1
Heat the oil in a large saucepan over medium-high heat. Add the onions and cook until softened, about 5 minutes.

Add the garlic, ginger, curry powder, cumin, cinnamon, turmeric, cardamom, coriander, cayenne (if using), and salt. Cook for 1-2 minutes, stirring constantly, until the spices are fragrant.

Add the potatoes, tomatoes, coconut milk, and 1 cup of water to the pan. Bring the mixture to a simmer, cover, and cook for 15 minutes, stirring occasionally.

Add the peas and cook for an additional 5 minutes, until the potatoes are tender. Taste and adjust seasoning, if necessary.
