Indian Potato Curry

Ingredients (2 Persons)

  • 1 tablespoon vegetable oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon garam masala
  • 1/2 teaspoon red chili flakes
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground black pepper
  • 3 large potatoes, peeled and cut into cubes
  • 1 cup vegetable broth
  • 1 (14.5 ounce) can diced tomatoes
  • 1/2 cup coconut milk

Directions

  • Step 1
    Heat oil in a large skillet over medium-high heat. Add the onion, garlic, and ginger and cook until the onion is softened, about 5 minutes.
  • Step 2
    Stir in the cumin, coriander, turmeric, garam masala, chili flakes, cardamom, cinnamon, and pepper and cook for 1 minute.
  • Step 3
    Add the potatoes and cook for 5 minutes, stirring occasionally.
  • Step 4
    Add the vegetable broth, tomatoes, and coconut milk and bring to a simmer. Reduce heat to low and cover the skillet.
  • Step 5
    Simmer for 20 minutes, or until the potatoes are tender. Serve warm.
