Ingredients (2 Persons)

  • 1/2 cup uncooked sushi rice
  • 2 tablespoons rice vinegar
  • 1/2 teaspoon sugar
  • 1 teaspoon salt
  • 2 nori sheets
  • 1/2 cucumber, julienned
  • 1/2 avocado, sliced
  • 1/4 cup vegan mayonnaise
  • 1 tablespoon sriracha sauce

Directions

  • Step 1
    Cook the sushi rice according to package instructions. Once cooked, transfer the rice to a bowl and stir in the rice vinegar, sugar, and salt.
  • Step 2
    Lay a nori sheet on a flat surface and spread 1/4 of the cooked rice evenly across the sheet.
  • Step 3
    Top the rice with 1/4 of the cucumber and avocado. Spread 1 tablespoon of mayonnaise and 1/4 teaspoon of sriracha sauce over the vegetables.
  • Step 4
    Roll the nori sheet tight and slice into 1-inch pieces. Repeat with the remaining ingredients to make 4 sushi burritos.
