Vegan Quinoa and Chickpea Curry

Ingredients (2 Persons)
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper
- 1 (14-ounce) can diced tomatoes, undrained
- 1 (14-ounce) can light coconut milk
- 1 cup vegetable broth
- 1 (15-ounce) can chickpeas, rinsed and drained
- 1 cup cooked quinoa
- 1/4 cup chopped fresh cilantro
- Salt and pepper, to taste
Directions

Step 1
Heat the oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.

Stir in the garlic, ginger, curry powder, cumin, coriander, and cayenne pepper. Cook until fragrant, about 1 minute.

Add the diced tomatoes, coconut milk, and vegetable broth. Bring to a simmer and cook for 5 minutes.
