Cauliflower Curry

Cauliflower Curry is a delicious and nutritious Indian dish made with cooked cauliflower, spices, and a variety of vegetables. Ingredients (2 Persons)

  • 1 head of cauliflower, cut into florets
  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 (14-ounce) can coconut milk
  • 1 (14-ounce) can diced tomatoes
  • 1/2 cup frozen peas

Directions

  • Step 1
    Heat the oil in a large skillet over medium heat. Add the onion, garlic, and ginger and cook until the onion is softened, about 5 minutes.
  • Step 2
    Stir in the curry powder, cumin, coriander, turmeric, and cayenne pepper (if using) and cook for 1 minute, until fragrant.
  • Step 3
    Add the cauliflower, coconut milk, diced tomatoes, and 1/2 cup of water. Bring to a simmer and cook until the cauliflower is tender, about 10 minutes.
  • Step 4
    Stir in the frozen peas and cook for 2 minutes, until heated through.
