Vegetable Sushi Rolls

Ingredients (2 Persons)
- 2 cups cooked sushi rice
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- Pinch of salt
- 1 avocado, sliced
- 1 cucumber, cut into thin strips
- 2 carrots, cut into thin strips
- 1/2 cup pickled radish, cut into thin strips
- 1/4 cup sliced nori (seaweed sheets)
Directions

Step 1
To make the sushi rice, rinse the rice and cook according to package instructions. Once the rice is cooked, transfer it to a large bowl and stir in the rice vinegar, sugar, and salt.

Lay a sheet of nori on a sushi mat. Wet your hands and spread about 1/2 cup of the cooked rice over the nori, leaving a 1-inch border at the top. Arrange the avocado, cucumber, carrots, and radish in a single line across the middle of the rice.

Using the mat, roll the sushi into a tight cylinder. Wet the edge of the nori to help seal the roll. Slice the roll into 8 pieces and serve.
