Roasted Carrot Curry

- 2 pounds carrots, peeled and cut into 1-inch pieces
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground ginger
- 1 teaspoon garlic powder
- 1 teaspoon turmeric
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon ground cayenne pepper (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup coconut milk
- 1/4 cup peanut butter
- 1/4 cup freshly squeezed lime juice
- 2 tablespoons freshly chopped cilantro leaves
- 1/4 cup roasted cashews, for garnish (optional)

Step 1
Preheat the oven to 425°F. Line a rimmed baking sheet with parchment paper.

In a large bowl, combine the carrots, olive oil, cumin, coriander, ginger, garlic powder, turmeric, smoked paprika, cinnamon, cardamom, cayenne (if using), salt, and pepper.

Toss to coat the carrots evenly with the spices. Spread the carrots onto the prepared baking sheet and roast for 25-30 minutes, until the carrots are tender and lightly browned.

Meanwhile, in a small saucepan, combine the coconut milk, peanut butter, lime juice, and cilantro. Heat over medium-low heat until the peanut butter is melted and the sauce is smooth, stirring occasionally.

Remove the carrots from the oven and transfer to a serving bowl. Pour the curry sauce over the carrots and toss to coat. Garnish with roasted cashews, if desired, and serve.
