Potato and Broccoli Curry

Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 4 cups potatoes, diced
  • 2 cups broccoli florets
  • 1 can coconut milk
  • 1/4 cup water
  • salt and pepper, to taste

Directions

  • Step 1
    Heat the oil in a large skillet over medium-high heat. Add the onion and cook for 3-4 minutes, stirring occasionally, until softened.
  • Step 2
    Add the garlic, curry powder, cumin, turmeric, coriander, cinnamon, and cayenne pepper. Cook for 1 minute, stirring constantly.
  • Step 3
    Add the potatoes and broccoli to the skillet. Stir to combine, then pour in the coconut milk and water. Stir to combine.
  • Step 4
    Bring the mixture to a simmer and cook for 10-15 minutes, stirring occasionally, until the potatoes are tender.
  • Step 5
    Season with salt and pepper, to taste. Serve hot.
