Ingredients (2 Persons)

  • 4 cups cooked sushi rice
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 package seaweed sheets
  • 2 avocados, sliced
  • 1 cucumber, peeled and sliced into thin strips
  • 1 package imitation crab meat, sliced into thin strips
  • 1/2 cup mayonnaise

Directions

  • Step 1
In a large bowl, combine the cooked sushi rice, rice vinegar, sugar, and salt. Mix until the sugar and salt are evenly distributed.
  • Step 2
Lay a sheet of seaweed on a bamboo sushi mat. Spread 1/4 of the sushi rice on top of the seaweed, leaving about 1 inch of the seaweed uncovered on one side.
  • Step 3
Arrange the avocado slices, cucumber strips, and imitation crab meat in a line down the middle of the sushi rice.
  • Step 4
Spread 1/4 of the mayonnaise over the top of the ingredients in the line.
  • Step 5
Lift the end of the sushi mat closest to you and begin to roll the sushi away from you, pressing lightly to form a tight roll. When you reach the end of the seaweed sheet, wet the edge with a bit of water to help it stick together.
  • Step 6
Repeat with the remaining ingredients to make 4 rolls of sushi.
