Spicy Scallop Roll Sushi

Spicy Scallop Roll Sushi is a popular Japanese sushi dish that combines raw scallops with spicy mayonnaise, nori (seaweed sheet), and vinegared rice. Ingredients (2 Persons)

  • 4 ounces scallops, diced
  • 2 tablespoons mayonnaise
  • 1 tablespoon sriracha
  • 2 tablespoons diced cucumber
  • 1 teaspoon sesame seeds
  • 4 sheets nori
  • 3 cups cooked sushi rice

Directions

  • Step 1
    In a bowl, combine the diced scallops, mayonnaise, and sriracha until evenly mixed.
  • Step 2
    Lay 1 sheet of nori on a sushi mat. Spread 1/4 cup of sushi rice evenly over the nori, leaving about 1/2 inch of the nori uncovered at the top.
  • Step 3
    Spread 1/4 of the scallop mixture in a line across the center of the nori. Top with 1/4 of the cucumber, sesame seeds, and any other desired toppings.
  • Step 4
    Using the sushi mat, roll the nori up into a tight cylinder. Slice the roll into 8 even pieces and arrange on a plate.
