Vegan Lentil and Potato Curry

Vegan Lentil and Potato Curry is a delicious and nutritious meal that is perfect for any time of the year. Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cardamom
  • 2 cups vegetable broth
  • 1 (14 ounce) can coconut milk
  • 2 cups cooked lentils
  • 2 large potatoes, diced
  • 1/2 cup frozen peas
  • 1/4 cup chopped fresh cilantro leaves

Directions

  • Step 1
    Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  • Step 2
    Stir in the ginger, curry powder, cumin, turmeric, coriander, and cardamom and cook for 1-2 minutes, until fragrant.
  • Step 3
    Add the vegetable broth, coconut milk, lentils, potatoes, and frozen peas. Bring the mixture to a simmer and cook until the potatoes are tender, about 15 minutes.
  • Step 4
    Stir in the cilantro and season with salt and pepper, to taste. Serve hot.
