Vegan Cauliflower, Potato and Pea Curry

Ingredients (2 Persons)
- 1 head of cauliflower, cut into florets
- 3 large potatoes, peeled and diced
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons grated ginger
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- 1 can (14.5 ounces) diced tomatoes, drained
- 1 1/2 cups vegetable broth
- 1 can (15 ounces) chickpeas, drained and rinsed
- 1 cup frozen peas, thawed

Step 1
Heat the olive oil in a large skillet or pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.

Stir in the ginger, curry powder, cumin, turmeric, cinnamon, and cayenne pepper. Cook for 1 minute, stirring to combine.

Add the cauliflower, potatoes, tomatoes, and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes, or until the vegetables are tender.

Stir in the chickpeas and peas and cook for 5 minutes, or until heated through.
