Tofu Katsu Curry

Tofu Katsu Curry is a popular vegan-friendly dish originating in Japan. It is a vegan alternative to the traditional katsu curry, which is made with pork cutlets. The dish consists of fried cubes of tofu coated in panko breadcrumbs, served in a mild curry sauce with vegetables. Ingredients (2 Persons)

  • 2 blocks firm tofu, drained, pressed, and cut into 8 slices
  • 1/2 cup all-purpose flour
  • 1/2 cup panko breadcrumbs
  • 2 large eggs, lightly beaten
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • salt and pepper, to taste

Directions

  • Step 1
    Preheat oven to 400°F. Line a baking sheet with parchment paper and set aside.
  • Step 2
    Place the flour, panko breadcrumbs, eggs, garlic powder, onion powder, paprika, salt, and pepper in separate shallow bowls.
  • Step 3
    Dredge each tofu slice in the flour, shaking off any excess, then dip in the beaten egg, and finally coat with the panko breadcrumbs.
  • Step 4
    Place the tofu slices on the prepared baking sheet and bake for 15 minutes, flipping the slices halfway through.
  • Step 5
    Heat a large skillet over medium-high heat. Add the oil and heat until it is shimmering. Add the onion and cook for 3-4 minutes, until softened.
  • Step 6
    Add the garlic, ginger, and curry powder to the skillet. Cook for 1 minute, stirring constantly.
  • Step 7
    Add the tomato sauce, vegetable broth, and honey. Bring the mixture to a simmer and cook for 5 minutes.
  • Step 8
    Add the cooked tofu slices to the skillet and cook for 2-3 minutes, until heated through. Serve with cooked rice and garnish with sesame seeds and chopped cilantro.
