Vegetarian Sushi Rice Noodle Bowl

Ingredients (2 Persons)

  • 2 tablespoons sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 4 cups cooked soba noodles
  • 1 cup cooked edamame
  • 1 cup sliced cucumber
  • 1 cup shredded carrots
  • 4 cups cooked sushi rice
  • 1/4 cup chopped scallions
  • 1/4 cup toasted sesame seeds
  • 4 sheets nori, cut into strips

Directions

  • Step 1
    Heat sesame oil in a large skillet over medium heat. Add garlic and ginger and cook until fragrant, about 1 minute.
  • Step 2
    Add soy sauce, rice vinegar, and honey and stir to combine. Bring to a simmer and cook for 2-3 minutes, until the sauce is slightly thickened.
  • Step 3
    In a large bowl, combine soba noodles, edamame, cucumber, carrots, and cooked sushi rice. Pour the sauce over the top and toss to combine.
  • Step 4
    Divide the noodle mixture among 4 bowls and top with scallions, sesame seeds, and nori strips. Serve warm.
