Vegetarian Spinach and Chickpea Curry

Ingredients (2 Persons)

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon garam masala
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (14-ounce) can diced tomatoes
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1/2 cup vegetable broth
  • 1 cup frozen spinach, thawed and drained
  • 1/4 cup cashews, chopped (optional)
  • Salt and pepper, to taste

Directions

  • Step 1
    Heat the olive oil in a large skillet over medium-high heat. Add the onion, garlic, and ginger and cook until the onion is soft and translucent, about 5 minutes.
  • Step 2
    Stir in the cumin, coriander, turmeric, garam masala, and cayenne pepper (if using). Cook for 1 minute, until the spices are fragrant.
  • Step 3
    Add the tomatoes, chickpeas, and vegetable broth to the skillet. Bring the mixture to a simmer and cook for 5 minutes.
  • Step 4
    Stir in the spinach and simmer for another 5 minutes, until the spinach is heated through.
  • Step 5
    Stir in the cashews (if using), and season with salt and pepper to taste. Serve hot.
