Vegan Black Bean Curry

Ingredients (2 Persons)

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground ginger
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ground cinnamon
  • 1 (14 ounce) can diced tomatoes
  • 2 (15 ounce) cans black beans, drained and rinsed
  • 1 (14 ounce) can coconut milk
  • 1/4 cup chopped fresh cilantro

Directions

  • Step 1
    Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Stir in the garlic, cumin, coriander, turmeric, ginger, chili powder, and cinnamon. Cook until the spices are fragrant, about 1 minute.
  • Step 3
    Stir in the diced tomatoes with their juices, black beans, and coconut milk. Bring to a simmer, reduce the heat to low, and cook until the flavors have melded together, about 10 minutes.
  • Step 4
    Stir in the cilantro and season with salt and pepper to taste. Serve hot.
