Vietnamese Pho Soup
Vietnamese Pho Soup is a traditional Vietnamese soup made with a variety of herbs and spices, as well as either beef or chicken. Ingredients (2 Persons)
- 4 quarts chicken broth
- 2 onions, halved
- 1 (3 inch) piece of fresh ginger, sliced
- 3 cloves garlic, smashed
- 1 cinnamon stick
- 2 star anise pods
- 1 tablespoon coriander seeds
- 1 teaspoon black peppercorns
- 1/4 cup fish sauce
- 1/2 pound sirloin steak, thinly sliced
- 1/2 cup fresh basil leaves
- 1/2 cup fresh cilantro leaves
- 1/4 cup fresh mint leaves
- 1/4 cup fresh lime juice

Step 1
In a large pot, bring the chicken broth, onions, ginger, garlic, cinnamon stick, star anise, coriander seeds, and black peppercorns to a simmer over medium heat. Simmer for 30 minutes.

Strain the broth through a fine mesh sieve and discard the solids. Return the broth to the pot and stir in the fish sauce.

Bring the broth to a boil, then reduce the heat to low and add the steak. Simmer for 5 minutes, or until the steak is cooked through.

Add the basil, cilantro, mint, and lime juice. Ladle the soup into individual bowls and serve.
