Jackfruit Curry

Jackfruit Curry is a popular dish in India and other South Asian countries, typically made with green jackfruit, spices, onion, tomato and a variety of other ingredients. Ingredients (2 Persons)

  • 2 tablespoons vegetable oil
  • 2 cans jackfruit, drained and cut into chunks
  • 1 onion, chopped
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1 can coconut milk
  • 1/2 cup vegetable broth
  • 1 teaspoon honey
  • 1/2 cup peas
  • Salt and pepper, to taste

Directions

  • Step 1
    Heat the oil in a large skillet over medium heat. Add the jackfruit and cook for 5-7 minutes, stirring occasionally.
  • Step 2
    Add the onion, garlic, and ginger to the skillet and cook for 2-3 minutes, until the vegetables are tender.
  • Step 3
    Add the turmeric, cumin, coriander, paprika, and cayenne pepper to the skillet and cook for 1-2 minutes, until the spices are fragrant.
  • Step 4
    Stir in the coconut milk, vegetable broth, honey, and peas. Bring the mixture to a simmer and cook for 5-10 minutes, until the sauce has thickened.
  • Step 5
    Season with salt and pepper, to taste, and serve. Enjoy!
