Jackfruit Curry

Ingredients (2 Persons)
- 2 tablespoons vegetable oil
- 2 cans jackfruit, drained and cut into chunks
- 1 onion, chopped
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1 can coconut milk
- 1/2 cup vegetable broth
- 1 teaspoon honey
- 1/2 cup peas
- Salt and pepper, to taste
Directions

Step 1
Heat the oil in a large skillet over medium heat. Add the jackfruit and cook for 5-7 minutes, stirring occasionally.

Add the onion, garlic, and ginger to the skillet and cook for 2-3 minutes, until the vegetables are tender.

Add the turmeric, cumin, coriander, paprika, and cayenne pepper to the skillet and cook for 1-2 minutes, until the spices are fragrant.

Stir in the coconut milk, vegetable broth, honey, and peas. Bring the mixture to a simmer and cook for 5-10 minutes, until the sauce has thickened.

Season with salt and pepper, to taste, and serve. Enjoy!
