Vegan Cucumber Sushi Roll

Ingredients (2 Persons)

  • 4 sheets of nori
  • 2 cups cooked white rice
  • 2 tablespoons rice vinegar
  • 1 cucumber, julienned
  • 1 avocado, peeled, pitted and sliced
  • 1 carrot, julienned

Directions

  • Step 1
    Lay out a sheet of nori on a bamboo sushi rolling mat.
  • Step 2
    Spread 1/2 cup of cooked white rice over the nori, leaving a 1/2 inch border at the top and bottom.
  • Step 3
    Sprinkle 1 tablespoon of rice vinegar over the rice.
  • Step 4
    Arrange the cucumber, avocado and carrot in a line in the center of the rice.
  • Step 5
    Lift the edge of the bamboo mat closest to you, and begin to roll the sushi away from you, using your fingers to keep the filling in place.
  • Step 6
    Continue to roll until the nori is completely enclosed.
  • Step 7
    Gently press the bamboo mat against the roll to firm it up.
  • Step 8
    Repeat with the remaining ingredients to make 3 more sushi rolls.
