Lemongrass Chicken Stir-Fry

Ingredients (2 Persons)

  • 1 pound boneless, skinless chicken breasts, cut into small cubes
  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 tablespoons minced fresh lemongrass
  • 1 tablespoon freshly grated ginger
  • 1 teaspoon red pepper flakes (optional)
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 2 tablespoons toasted sesame oil
  • 1/4 cup chopped fresh cilantro leaves

Directions

  • Step 1
    Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken and cook until it is no longer pink, about 5 minutes.
  • Step 2
    Add the onion, garlic, bell pepper, lemongrass, and ginger to the skillet and cook until the vegetables are tender, about 5 minutes.
  • Step 3
    Stir in the red pepper flakes (if using), soy sauce, honey, rice vinegar, and sesame oil. Simmer for 5 minutes, until the sauce has thickened.
  • Step 4
    Stir in the cilantro leaves and serve hot over cooked rice or noodles.
