Ingredients (2 Persons)

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons fresh ginger, minced
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 2 potatoes, peeled and diced
  • 3 cups vegetable broth
  • 1 cup frozen green peas
  • 1/4 cup coconut milk
  • Salt and pepper, to taste

Directions

  • Step 1
    Heat the olive oil in a large skillet over medium-high heat. Add the onion and cook until softened, about 5 minutes.

    Add the garlic and ginger to the skillet and cook for 1 minute, until fragrant.

    Stir in the curry powder and cumin and cook for 1 minute, until fragrant.

    Stir in the frozen peas and coconut milk. Simmer for 5 minutes, until the peas are cooked through.
