Ingredients (2 Persons)

  • 1/2 cup cooked brown or white rice
  • 1 teaspoon toasted sesame oil
  • 1/4 teaspoon salt
  • 2 sheets nori, cut into thin strips
  • 1/4 cup cooked edamame beans, shelled
  • 1/4 cup cooked sweet corn
  • 2 tablespoons pickled ginger, sliced thin
  • 1/4 cup shredded red cabbage
  • 1/4 cup shredded carrots
  • 1/4 cup cucumber, sliced thin
  • 1/4 cup avocado, sliced thin
  • 2 tablespoons sesame seeds

Directions

  • Step 1
    In a medium bowl, combine the cooked rice, sesame oil, and salt. Mix until combined.
  • Step 2
    To assemble the bowls, divide the rice among 4 bowls. Top each bowl with nori strips, edamame beans, sweet corn, pickled ginger, red cabbage, carrots, cucumber, avocado, and sesame seeds. Serve immediately.
