Thai Mango Sticky Rice

Ingredients (2 Persons)

  • 2 cups Thai sweet rice
  • 2 cups coconut milk
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1/4 cup mango, diced
  • 1/4 cup toasted sesame seeds

Directions

  • Step 1
    Soak the Thai sweet rice in cold water for at least 4 hours or overnight.
  • Step 2
    Drain the rice and add it to a medium saucepan along with the coconut milk, sugar, and salt. Bring the mixture to a boil, then reduce the heat and simmer, covered, for 15 minutes or until the rice is tender and most of the liquid is absorbed.
  • Step 3
    Stir the mango into the rice and let it sit for 10 minutes to allow the flavors to combine. Sprinkle with toasted sesame seeds before serving.
