Tofu & Eggplant Curry

- 4 tablespoons vegetable oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 tablespoons grated ginger
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- 1 teaspoon chili powder
- 1 (14-ounce) can diced tomatoes
- 1 (14-ounce) can coconut milk
- 1 large eggplant, cubed
- 1 (14-ounce) package firm tofu, cubed
Directions

Step 1
Heat the oil in a large pot over medium heat. Add the onion and cook until it is softened, about 5 minutes.

Add the garlic, ginger, cumin, coriander, turmeric, cinnamon, cardamom, and chili powder to the pot and cook for 1-2 minutes, until the spices are fragrant.

Add the diced tomatoes, coconut milk, eggplant, and tofu to the pot. Bring to a simmer and cook for 15-20 minutes, stirring occasionally, until the eggplant is tender.
