Easy Lamb Curry

Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons fresh ginger, grated
  • 2 teaspoons garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1 (14.5-ounce) can diced tomatoes
  • 1 cup chicken broth
  • 2 pounds lamb, cubed
  • 1/4 cup fresh cilantro, chopped

Directions

  • Step 1
    Heat the oil in a large skillet over medium-high heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Add the garlic, ginger, garam masala, cumin, coriander, turmeric, cinnamon, and cayenne pepper. Cook for 1 minute, stirring constantly.
  • Step 3
    Stir in the tomatoes and chicken broth and bring the mixture to a simmer. Add the lamb cubes and cook, stirring occasionally, until the lamb is cooked through, about 10 minutes. Stir in the cilantro.
  • Step 4
    Serve over cooked basmati rice or with naan bread.
