Green Bean Curry

Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 teaspoon garam masala
  • 1 teaspoon cumin
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (14-ounce) can diced tomatoes
  • 1 red bell pepper, diced
  • 1 (15-ounce) can green beans, drained and rinsed

Directions

  • Step 1
    Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Add the garlic, ginger, garam masala, cumin, turmeric, and cayenne pepper (if using). Cook for 1 minute, stirring constantly.
  • Step 3
    Add the diced tomatoes, bell pepper, and green beans. Bring to a simmer and cook for 8-10 minutes, until the vegetables are tender.
  • Step 4
    Serve with cooked rice or naan bread, if desired.
