Vegetarian Spring Rolls

Vegetarian Spring Rolls are a popular Asian dish that have been adapted to suit a variety of tastes. They consist of a thin, crispy wrapper filled with a variety of fresh vegetables, herbs, and spices. Vegetarian Spring Rolls are often served as an appetizer or snack, but can also be served as a main dish. They are usually deep-fried, but can also be steamed or baked. The ingredients and flavors of Vegetarian Spring Rolls can vary greatly, depending on the country or region they are from.

Ingredients (2 Persons)

  • 8 spring roll wrappers
  • 1 cup cooked rice noodles
  • 1/2 cup matchstick carrots
  • 1/2 cup shredded cabbage
  • 1/2 cup mung bean sprouts
  • 1/4 cup diced green onion
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon garlic powder
  • Vegetable oil, for frying

Directions

  • Step 1
    Lay a spring roll wrapper out on a cutting board. Place a small handful of noodles, carrots, cabbage, bean sprouts, green onion, mint, and cilantro in the center of the wrapper.
  • Step 2
    Fold the bottom of the wrapper up over the filling and tuck it in firmly. Fold in the sides of the wrapper and roll it up tightly.
  • Step 3
    Repeat with the remaining wrappers and filling ingredients.
  • Step 4
    Heat about 1 inch of vegetable oil in a large skillet over medium-high heat. Fry the spring rolls in batches until golden brown and crispy, about 3 minutes per side.
  • Step 5
    Remove the spring rolls from the pan and drain on a paper towel-lined plate. Serve with soy sauce, rice vinegar, and sesame oil for dipping.
