Vegetarian Spring Rolls
Vegetarian Spring Rolls are a popular Asian dish that have been adapted to suit a variety of tastes. Ingredients (2 Persons)
- 8 spring roll wrappers
- 1 cup cooked rice noodles
- 1/2 cup matchstick carrots
- 1/2 cup shredded cabbage
- 1/2 cup mung bean sprouts
- 1/4 cup diced green onion
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh cilantro
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1/4 teaspoon garlic powder
- Vegetable oil, for frying
Directions

Step 1
Lay a spring roll wrapper out on a cutting board. Place a small handful of noodles, carrots, cabbage, bean sprouts, green onion, mint, and cilantro in the center of the wrapper.

Fold the bottom of the wrapper up over the filling and tuck it in firmly. Fold in the sides of the wrapper and roll it up tightly.

Repeat with the remaining wrappers and filling ingredients.

Heat about 1 inch of vegetable oil in a large skillet over medium-high heat. Fry the spring rolls in batches until golden brown and crispy, about 3 minutes per side.

Remove the spring rolls from the pan and drain on a paper towel-lined plate. Serve with soy sauce, rice vinegar, and sesame oil for dipping.
