Green Coconut Chicken Curry

Ingredients (2 Persons)

  • 4 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • 1 can (14.5 ounces) coconut milk
  • 1/2 cup chicken broth
  • 1/4 cup freshly chopped cilantro leaves

Directions

  • Step 1
    Heat the oil in a large skillet over medium-high heat. Add the chicken pieces and cook for 5 minutes or until lightly browned.
  • Step 2
    Add the onion, garlic, and ginger to the skillet and cook for 3 minutes or until the vegetables are tender.
  • Step 3
    Stir in the curry powder, cumin, turmeric, coriander and cayenne pepper and cook for 2 minutes or until the spices are fragrant.
  • Step 4
    Pour in the coconut milk and chicken broth and bring the mixture to a simmer. Simmer for 10 minutes or until the chicken is cooked through.
  • Step 5
    Stir in the cilantro and season with salt and pepper to taste. Serve over warm cooked rice.
