Beef Madras Curry

Ingredients (2 Persons)

  • 1 1/2 pounds ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon cayenne pepper
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (14 ounce) can coconut milk
  • 1/4 cup chopped fresh cilantro

Directions

  • Step 1
    Heat a large skillet over medium-high heat. Add the ground beef and cook until it is no longer pink, breaking it up into small pieces as it cooks.

    Add the onion and garlic to the skillet and cook until the vegetables are tender, about 5 minutes.
  • Step 3
    Stir in the ginger, cumin, cinnamon, turmeric, and cayenne pepper. Cook for 1-2 minutes, until the spices are fragrant.

    Add the diced tomatoes and coconut milk to the skillet. Bring the mixture to a simmer and cook for 5-10 minutes, until the sauce has thickened and the flavors have melded together.
  • Step 5
    Stir in the chopped cilantro and serve warm with cooked rice or naan bread.
