Korean Japchae

Korean japchae is a traditional Korean dish made with stir-fried sweet potato noodles, vegetables, and meat. The noodles are usually made from sweet potato starch, but can also be made from other starches, such as buckwheat. The vegetables most commonly used in japchae include carrots, bell peppers, onion, mushrooms, spinach, and zucchini, but other vegetables can be used as well. The meat used can be beef, pork, chicken, or seafood, or a combination of these. The dish is often seasoned with soy sauce, garlic, sesame oil, and sugar. Japchae is often served as a side dish, but can also be served as a main dish.

Ingredients (2 Persons)

  • 8 ounces Korean sweet potato noodles (dangmyeon)
  • 3 tablespoons vegetable oil
  • 1/2 cup onion, chopped
  • 1/2 cup carrots, sliced
  • 1/2 cup bell peppers, cut into thin strips
  • 2 cloves garlic, finely minced
  • 1/2 pound mushrooms, sliced
  • 1/2 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1 tablespoon soy sauce
  • 2 tablespoons sesame seeds

Directions

  • Step 1
    Bring a large pot of water to a boil. Add the noodles and cook until they are al dente, about 10 minutes.
  • Step 2
    Drain the noodles and rinse them with cold water. Set aside.
  • Step 3
    Heat the vegetable oil in a large skillet over medium-high heat. Add the onions and carrots and cook for 3-4 minutes, until the vegetables are tender.
  • Step 4
    Add the bell peppers, garlic, and mushrooms and cook for an additional 3-4 minutes, until the mushrooms are softened.
  • Step 5
    Stir in the sesame oil, sugar, and soy sauce and cook for 1-2 minutes, until the ingredients are well combined.
  • Step 6
    Add the cooked noodles to the skillet and toss to combine. Cook for 2-3 minutes, until the noodles are heated through.
  • Step 7
    Sprinkle the sesame seeds over the top and serve hot or cold.
