Vegetarian Sushi Roll with Asparagus and Carrots

Ingredients (2 Persons)

  • 4 cups cooked sushi rice
  • 4 sheets of nori
  • 1/2 bunch of asparagus, sliced into thin sticks
  • 1 large carrot, peeled and cut into thin sticks
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt

Directions

  • Step 1
    In a medium bowl, combine the rice vinegar, sugar and salt. Stir until the sugar and salt are dissolved.
  • Step 2
    Add the cooked sushi rice to the bowl and stir to combine. Cover the bowl with a damp towel and let sit for 10 minutes.
  • Step 3
    To assemble the roll, lay a sheet of nori on a sushi mat. Using wet hands, spread a thin layer of the sushi rice on the nori.
  • Step 4
    Add a small handful of the asparagus and carrot sticks to the center of the nori. Carefully roll the sushi mat up, tucking the ends of the nori inward as you roll.
  • Step 5
    Using a sharp knife, cut the sushi roll into 8 pieces. Serve with soy sauce, wasabi, and pickled ginger.
