Mild Indian Curry

Ingredients (2 Persons)
- 2 tablespoons vegetable oil
- 1 large onion, diced
- 4 cloves garlic, minced
- 2 tablespoons freshly grated ginger
- 2 tablespoons garam masala
- 1 tablespoon ground cumin
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1 teaspoon ground cardamom
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon chili powder
- 1/2 teaspoon cayenne pepper (optional)
- 2 cups diced tomatoes
- 1 cup vegetable broth
- 1/2 cup coconut milk
- 1/4 cup chopped fresh cilantro
- Salt and freshly ground black pepper to taste
Directions

Step 1
Heat the oil in a large skillet over medium-high heat. Add the onion and cook until softened, about 5 minutes.

Add the garlic and ginger and cook until fragrant, about 1 minute.

Stir in the garam masala, cumin, turmeric, coriander, cardamom, cinnamon, nutmeg, chili powder, and cayenne pepper (if using). Cook for 1 minute, stirring constantly.

Add the tomatoes, vegetable broth, and coconut milk. Bring the mixture to a boil, reduce the heat to low, and simmer for about 10 minutes, until the sauce has thickened.
