Potato Curry

Ingredients (2 Persons)

  • 4 potatoes, cut into cubes
  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 1 tablespoon ginger, grated
  • 2 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt

Directions

  • Step 1
    Heat the oil in a large saucepan over medium-high heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Add the ginger and garlic and cook for 1 minute.
  • Step 3
    Add the potatoes and spices and mix to combine.
  • Step 4
    Add 1 cup of water and bring to a boil. Reduce the heat to low and simmer, stirring occasionally, until the potatoes are tender, about 15 minutes.
  • Step 5
    Add more water if the mixture is too dry.
  • Step 6
    Serve warm with rice, naan, or other accompaniments.
