Filipino Chicken Adobo

Ingredients (2 Persons)
- 4 chicken thighs
- 1/4 cup soy sauce
- 1/4 cup white vinegar
- 4 cloves garlic, minced
- 2 bay leaves
- 1 teaspoon black peppercorns
- 1 teaspoon sugar
Directions

Step 1
In a large bowl, combine the chicken, soy sauce, vinegar, garlic, bay leaves, peppercorns, and sugar. Mix until the chicken is well coated.

Transfer the chicken and marinade to a large pot or Dutch oven. Bring to a boil over medium-high heat, then reduce the heat to low and simmer for 30 minutes.

Remove the chicken from the pot and set aside. Increase the heat to medium-high and reduce the marinade until thick and syrupy, about 10 minutes.

Return the chicken to the pot and simmer for an additional 10 minutes, stirring occasionally. Serve hot with steamed rice.
