Indian Butternut Squash Curry

Indian Butternut Squash Curry is a popular vegetarian dish from India. It is made with a combination of spices, butternut squash, and other vegetables such as onion and tomatoes. Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon cayenne pepper (optional)
  • 2 cups vegetable broth
  • 3 cups cubed butternut squash
  • 1 can (14.5 ounces) fire-roasted diced tomatoes, drained
  • 1 can (14 ounces) chickpeas, drained and rinsed
  • 1 can (14 ounces) coconut milk
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper, to taste

Directions

  • Step 1
    Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Add the garlic, ginger, coriander, cumin, turmeric, paprika, cinnamon, and cayenne pepper (if using). Cook for 1 minute, stirring constantly, until fragrant.
  • Step 3
    Add the vegetable broth, butternut squash, tomatoes, chickpeas, and coconut milk. Stir to combine.
  • Step 4
    Bring the mixture to a boil, then reduce heat to low and simmer for 20-25 minutes, until the butternut squash is tender.
  • Step 5
    Stir in the cilantro, salt and pepper. Serve hot.
