- 1/2 cup cooked edamame beans
- 1/2 cup sliced cucumbers
- 1/2 cup matchstick carrots
- 1/2 cup diced avocado
- 1/4 cup sliced scallions
- 1/2 cup crumbled tofu
- 1 sheet nori, cut into thin strips
Directions

Step 1
Cook the sushi rice according to package instructions.

In a small bowl, whisk together the sesame seeds, tamari, rice vinegar, sugar, and vegetable oil.
