Vietnamese-Style Spring Rolls

Ingredients (2 Persons)
- 1 package large spring roll wrappers (rice paper)
- 2-3 cups cooked rice vermicelli noodles
- 1 head red leaf lettuce, shredded
- 1 cup shredded carrots
- 1/2 cup chopped fresh mint leaves
- 1/2 cup chopped fresh cilantro leaves
- 1/2 cup chopped fresh basil leaves
- 1/2 cup chopped peanuts (optional)
- 1/2 cup hoisin sauce
- 1/4 cup rice vinegar
- 1/4 cup soy sauce
Directions

Step 1
Fill a shallow bowl or pie pan with warm water. One at a time, dip the spring roll wrappers into the water for about 10 seconds, or until they are pliable.

Lay the wrappers on a work surface. Place a small handful of noodles, lettuce, carrots, mint, cilantro, and basil in the center of the wrapper.

Fold the bottom of the wrapper over the filling, tucking the edges in to make a tight packet. Fold in the sides, and then roll up the wrapper tightly.

Repeat with the remaining wrappers and filling ingredients. Serve the spring rolls with hoisin sauce, rice vinegar, and soy sauce for dipping.
