Curry Rice

Ingredients (2 Persons)

  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 2 cups uncooked white rice
  • 3 tablespoons curry powder
  • 4 cups chicken stock

Directions

  • Step 1
    Heat the oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Add the garlic and ginger and cook for another minute.
  • Step 3
    Add the rice and curry powder and stir to combine. Pour in the chicken stock and bring to a boil.
  • Step 4
    Reduce the heat to low, cover, and simmer for 20 minutes, or until the rice is cooked through and all the liquid is absorbed.
